This might be the only pancake I make at home from now on. I still don’t know why people call it German pancake. Did German invent this delicious puffy creation?
- 3 large eggs
- ½ cup flour
- ½ cup whole milk
- 1 tablespoon sugar
- Pinch of nutmeg
- Pinch of cinnamon
- 4 tablespoons butter
*Keeping ingredients at room temperature makes it easier to mix by hand.
- Preheat oven to 420 degrees or 215 celsius
- Combine eggs, flour, milk, sugar, nutmeg, and cinnamon in a mixing bowl, beat until smooth. Blenders also do the job.
- Heat a heavy skillet (ideally cast iron) or a baking dish on medium heat for 5 mins. Place butter on the skillet. As soon as the butter has melted and just started turning brown, turn off the stove. Add the batter to the skillet, carefully take the skillet into oven, bake for 18 mins, or until the cake is puffed and golden. Lower the temperature to 300 degrees and bake for an extra 3-5 mins
- Remove skillet from oven, serve the pancake with fresh fruits, powdered sugar, jam, etc.
