Having just moved to Boston, I’m still getting used to the weather here. It’s usually cold in early morning while I have to walk for about 20 mins to the train station to get to school. This is when I realize I need a real breakfast to power me through the morning. Otherwise, I would be so grumpy after walking in that weather.

This toast recipe is simple but healthy and hearty. Peanut butter is a natural source of  protein and fat, chia seeds and banana are long known as superfood. This combination will fuel your day. I used whole grain, dark bread for mine, but you can totally customize yours. Pick any types of bread that you like or simply use the one that you already have at home.

Ingredients:

– 2 slices of bread

– creamy peanut butter (other options including almond butter or cashew butter)

– chia seeds (optional, I know some people don’t like chia, if so, that’s fine, you can just leave it out)

– raw honey

– 1 banana, cut into several sections (do this when everything else is ready, otherwise the banana gets darker when you leave it outside for a long time)

Directions:

Step 1: Toast the bread

Step 2: Spread peanut butter over the bread, top with slices of banana

Step 3: Drizzle a little bit of raw honey and sprinkle chia seeds on top
