
Buttery sponge pancake is always a great choice for breakfast or brunch. I have been a fan of pancake since the very first try at a French restaurant in Hanoi a few years ago. As it becomes my favorite food, I have attempted to search for healthy pancake recipe & make it by myself. (Man, I could enjoy pancackes 5 times in a week :))
And here are two recipes were tested and fixed that I found quite satisfactory. Two recipes are using healthy ingredients such as yogurt and coconut oil. I encourage you guys to try it! If you do try it, make sure to take photos & send me or hashtag #totbrecipes !
Greek Yogurt Pancake – Best pancake recipe – Ingredients
1 cup all purpose flour
1 tsp baking powder
1/4 tsp salt
1 tbsp sugar
1 large beaten egg
2/3 cup unsweetened Greek yogurt
1/3 cup milk
1/2 tbsp lemon juice
1 tbsp lemon zest
1 tbsp melted butter at room temperature
Coconut Pancake – Ingredients
1 cup all-purpose flour
1 tbsp sugar
1 tsp baking powder
1/4 tsp salt
1 large beaten egg
3/4 cup coconut milk (can be substituted by whole milk)
1 tsp vanilla extract (optional)
2 tbsp coconut oil
Directions
– Mix all the flour + sugar + salt + baking powder together in a large bowl (dry ingredients)
– In one another bowl, mix the eggs, milk, yogurt, oil, butter, .. (liquids) Whisk the mixture til combine
– Mix dry ingredients with egg +milk mixture .. Whisk til combine
– Preheat non-stick pan, low heat, use butter, cooking oil or coconut oil to lightly grease the pan
– Pull the batter evenly onto the pan, flip after 1-2 minute, then cook for an additional minute
– Serve with fresh fruits, honey, maple syrup, or cream. You can also make savoury pancake breakfast or snack (served with bacon, ground beef, ..)
